Chicken Tortilla Soup

Slow cooker tortilla soup is the easiest and most delicious soup I have ever made!  It's one of those soups that you just can't get enough of and it's very hearty and filling at the same time.  It's also a perfect week night meal because it's cooked in the slow cooker! You just dump all the ingredients in and 5 to 6 hours later, Dinner is served!  I usually serve this with tortilla strips.  You could also add avocado or sour cream...get creative with this one.

Slow Cooker Tortilla Soup

Ingredients:

1 lb. boneless chicken breasts (cut into chunks)

2 cans (10.75 oz) Cream of Chicken Soup

I cup of salsa

2 cups frozen whole kernel corn

1 can (15 oz) black beans

1 1/3 cup of water

1 tsp ground cumin

1 cup shredded cheddar cheese (or Mexican blend)

Tortilla chips (crushed) (optional)

 

Instructions:

1.      Place Chicken in the slow cooker

2.      Pour soup, salsa, corn, beans, water and cumin over the chicken and stir.

3.      Cover and cook on low for about 5 hours or until chicken is cooked

4.      Stir in cheese and continue to cook another 15 minutes

5.      Serve with tortilla strips (or crushed tortilla chips).

(You can also add additional cheese, sour cream, green onions or avocado, if desired)
