Going Bananas!

I love bananas! I especially love them in dessert recipes. One of my favorite desserts of all time is Old Fashioned Banana Pudding; and my mom made the best! Nobody could make a pudding like her! Her banana pudding is what started my love affair with bananas. In this article, I'm going to feature three delicious dessert recipes using bananas! All three are very easy to make and are sure to impress! Do yourself a favor and give these recipes a try!

Banana Pecan Bread Pudding

Ingredients:

1 loaf of French bread

3 cups of whole milk

1 cup of sugar

2 Tbsp brown sugar

1 tsp of salt

1 Tbsp vanilla extract

6 eggs

¼ cup unsalted butter (melted)

2 bananas

Chopped pecans (desired amount)

Maple or pancake syrup (desired amount)

Instructions:

1. Cut bread into one inch cubes.

2. Spray a 13x9 inch dish with cooking spray and place the bread in the dish.

3. Mix together the milk, sugar, brown sugar, salt, vanilla, eggs, and melted butter until well combined.

4. Pour the mixture over the bread.

5. Lightly press the bread down in the mixture with a spoon.

6. Cover and place in the refrigerator for 1 ½ hours.

7. Preheat oven to 350 degrees.

8. Bake in oven for 45 – 50 minutes or until puffed up and golden brown.

9. Slice up bananas and place on top.

10. Sprinkle on some chopped pecans.

11. Pour desired amount of syrup on top.

12. Serve warm and enjoy!

Banana Egg Rolls

Ingredients

2 Bananas (or plantains)

8 Spring roll wrappers

Brown sugar

Vegetable oil for frying

Caramel Syrup

Instructions

1. Cut bananas into fourths (the long way).

2. Place one fourth of the banana on one corner of the spring roll wrapper.

3. Sprinkle about a tbsp. of brown sugar on the banana.

4. Roll the banana up in the spring roll wrapper tucking the sides in as you go.

5. Dab a little water on the end to seal the egg roll.

6. Place enough oil in a skillet to reach half the egg rolls.

7. Brown on both sides (2 – 3 minutes per side).

8. Serve with vanilla ice cream and drizzle with some caramel syrup.

9. Enjoy!

Old Fashioned Banana Pudding

Ingredients

2 cups whole milk

3/4 cup sugar

pinch of salt

3 egg yolks, beaten

2 Tbsp cornstarch

2 Tbsp vanilla extract

2 - 3 Bananas

1 box Nilla Wafers

Instructions

1. Boil water on medium high heat in a double boiler.

2. Pour milk, sugar and salt together with a whisk.

3. Add in eggs, stir. Then add cornstarch.

4. Stir frequently until thickened.

5. Remove from heat. Add in vanilla and mix well.

6. Grab a small baking dish.

7. Cover the the bottom of the dish with the mixture.

8. Top with desired amount of sliced bananas then top with nilla wafers.

9. Repeat.

10. Serve and enjoy!
