Crock Pot Madness!

There's nothing like a good ol' crock pot meal. I love slow cooker meals because it makes getting dinner on the table that much easier. I especially like crock pot "dump" meals. You know, those meals where you just dump all the ingredients in and leave it. Then eight hours later dinner is served! To us hardworking moms, there's nothing better. Here are a few of my favorite slow cooker meals. Also, don't forget to check out my YouTube channel, At Home With Tiffany, where I will be walking you through each recipe. Stay calm and be blessed!
Tortilla Soup
Ingredients:
1 lb. boneless chicken breasts (cut into chunks)
2 cans (10.75 oz) Cream of Chicken Soup
I cup of salsa
2 cups frozen whole kernel corn
1 can (15 oz) of black beans
1 1/3 cup of water
1 tsp ground cumin
1 cup shredded cheddar cheese
Tortilla chips (crushed) (optional)
Instructions:
Place Chicken in the slow cooker
Pour soup, salsa, corn, beans, water and cumin over the chicken and stir.
Cover and cook on low for about 5 hours or until chicken is cooked
Stir in cheese and continue to cook another 15 minutes
Serve with tortilla strips (or crushed tortilla chips)
(You can also add additional cheese, sour cream, green onions, or avocado, if desired)
Potato Soup
Ingredients:
1 bag of hash-brown potatoes
1 medium onion chopped
1 can (10.75 oz) Cream of Chicken Soup
2 cans (14 oz) chicken broth
1/2 tsp ground black pepper
1 package (8 oz) cream cheese, softened
Shredded cheddar cheese (optional)
Green onions (optional)
Bacon bits (optional)
Sour cream (optional)
Instructions:
Pour hash-brown potatoes, onion, soup, chicken broth and black pepper in the slow cooker. Stir.
Cover and cook on low for 4-5 hours.
Stir in cream cheese and cook for an additional 30 minutes.
Top with sprinkled shredded cheese, sliced green onions and bacon bits (if desired) and serve!
Pork & Beans
(Taste of Home Comfort Food Cookbook)
Ingredients:
1 boneless whole pork loin (3 lbs.)
1 medium onion, sliced
3 cans (15 oz, each) pork and beans
1/2 cups barbecue sauce
1/4 cup packed brown sugar
1 tsp garlic powder
Instructions:
Cut Roast in half and place in the slow cooker.
Top with onions.
Combine beans, barbecue sauce, brown sugar and garlic powder; pour over meat.
Cover and cook on low for 6 hours or until meat is tender.
Remove roast; shred with two forks.
Return meat to slow cooker; heat through and serve!
Slow Cooker Barbecue Ribs
Ingredients:
2 lbs pork baby back ribs
1 bottle (18 oz) of barbecue sauce
2 tbsp of hot sauce (you can add more or less if desired)
1/2 cup ketchup
1/2 cup brown sugar
1 tbsp Worcestershire sauce
2 tbsp of vinegar
Salt and pepper to taste
Instructions:
Preheat over to 400 degrees F.
Place meat in a baking pan and brown each side for 15 minutes.
Remove meat from the pan and place in slow cooker.
Sprinkle salt and pepper on the ribs
In a bowl, mix together barbecue sauce, hot sauce, ketchup, brown sugar, Worcestershire sauce and vinegar.
Pour over ribs.
Turn the ribs to make sure it's evenly coated.
Cook on low for 7-8 hours and serve!
(Stir a couple of times during cooking to prevent sticking.)
Chicken Lime Tacos
Ingredients:
1 1/2 lbs boneless chicken breasts
3 tbsp lime juice
1 tbsp chili powder
1 cup frozen corn
1 cup salsa
12 flour tortillas (6 in), warmed
Shredded cheddar cheese (optional)
Sour cream (optional)
Shredded lettuce (optional)
Instructions:
Place chicken in the slow cooker.
Combine lime juice and chili powder; pour over chicken.
Cover and cook on low for 5-6 hours or until chicken is tender.
Remove chicken and shred.
Place chicken back into the slow cooker.
Stir in corn and salsa.
Cover and cook on low for 30 minutes.
Serve in tortillas with cheese, sour cream, or lettuce if desired.
Enjoy!
Slow Cooker Beef Lasagna
Ingredients:
1 lb ground beef
1/2 lb lasagna pasta
1 jar of marinara sauce
1 cup ricotta cheese
2 cups Italian cheese blend
1 tsp Italian seasoning
salt and pepper to taste
parsley flakes (optional)
Instructions:
Brown ground beef over medium heat; drain.
Pour in marinara sauce, sprinkle in Italian seasoning.
Add in 1/2 cup ricotta cheese and 1 cup Italian cheese blend.
Stir until well combined. Turn off stove and remove from heat.
Break lasagna pasta into pieces and toss into the slow cooker.
Pour in the meat and cheese mixture.
Fold in the ingredients.
Top off with remaining ricotta cheese and Italian blend cheese.
Sprinkle parsley flakes on top; cover and cook on low for 3 hours.
