Easy Breakfast Casserole
This breakfast casserole is not only cheesy gooey heaven, it's also incredibly easy to prepare. My family gobbled it up and gave me praises because they thought I had spent hours in the kitchen making them this amazing breakfast! Ha! Little did they know, all I actually cooked on top of the stove was the sausage and didn't chop or cut a single vegetable! I used a bag of frozen potatoes with onions and peppers already included! This saved me a lot of time and effort. After I browned the sausage, I just tossed it in a large bowl along with the potatoes, added some salt, pepper, a handful of cheese and mixed together. I then spread the mixture into a 13X9 baking dish. I grabbed a few eggs, whisked with a couple tablespoons of milk, and poured the eggs evenly over top of my casserole. I sprinkled heaping handfuls of my favorite cheese on top and popped this baby in the oven! Was that easy or what?! And it's totally customizable! You can add bacon instead of sausage or go wild and add them both! If you don't like eggs, skip it! The options are endless! (Printable recipe below)
Here's what you'll need:

Ingredients:
1 lb mild sausage (or hot, if you like)
1 bag southern style potatoes O'brien, thawed
2 cups shredded cheddar, divided (or cheese of your choice)
1 tsp. salt
1 tsp. ground black pepper
4 eggs
2 Tbsp. milk
Instructions:
1. Preheat oven to 350 degrees Fahrenheit.
2. Brown sausage in a large skillet on medium heat, drain.
3. Place meat in a large bowl.
4. Add potatoes, cheese, 1 tsp. salt, and pepper to the bowl and mix.
5. Spread your mixture into a 13X9 baking dish.
6. Whisk eggs and milk together.
7. Pour egg mixture evenly over the potatoes.
8. Cover with foil and bake for 30 minutes.
9. Uncover, sprinkle remaining cheese (or more, if you like) on top.
10. Place back in the oven for 15 - 20 minutes or until cheesy and bubbly.
11. Serve and enjoy!
