Corn Beef Casserole
Corn Beef Casserole
Ingredients:
1 lb Ground beef
1 package of taco seasoning
1 can of diced tomatoes
1 can of whole kernel corn
2 – 3 cups crushed tortilla chips or tortilla strips
2 cups shredded cheddar cheese (or Mexican blend)
Salsa (optional)

Instructions:

Brown your meat on medium heat in a large skillet.

Drain.

Add in taco seasoning and ¾ cup of water.

Bring to a boil then lower heat.

Simmer for 5 minutes.

Add in tomatoes and corn; stir.

Turn off your heat.

Add in tortilla chips; stir.

Top with shredded cheese.

Serve and enjoy!

Corn beef casserole is a childhood favorite of mine. My mom made this often on those busy week nights. It took no time at all to make and tasted exactly the same every time she made it. It's basically seasoned meat, tomatoes, corn, and crushed tortilla chips covered in gooey melted cheddar cheese. Basically, it's a crushed taco! It's delicious!
