Ingredients:

5 - 6 Boneless skinless chicken breasts (thin sliced)

2-4 cups Italian bread crumbs

2 Eggs

1 tbsp milk (or water)

1 1/2 cup of vegetable oil

1 jar of marinara

2 cups shredded mozzarella cheese

Parsley flakes (optional)

 

Instructions:

1. Clean the chicken under running water and pat dry with a paper towel.

2. Beat eggs and milk together until well combined.

3. Dip each chicken breast into the egg mixture, then into the bread crumbs.  Coat evenly and set to the side.

4.Place oil in a pan and set to medium high heat.

5. Place chicken in the oil (once it's hot) and brown chicken on both sides.  About 6-7 minutes per side.

6. Preheat oven to 375 degrees.

7. In a baking dish, pour about 1/2 - 1 cup of the marinara at the bottom of the baking dish and spread it out with a spoon.

8. Place chicken on top.

9. Spoon about 2 tbsp of remaining marinara on each chicken breast.

10. Place a generous amount of the mozzarella cheese on top of each chicken breast.

11. Sprinkle with parsley flakes (for some color).

12. Place in the oven for 10-15 minutes or until cheese is completely melted.

13. Serve and enjoy!

* I usually make this with spaghetti with pasta sauce, a green salad, and garlic bread.

Chicken Parmesan

Easy Chicken Parmesan

Chicken Parmesan is one of my absolute favorite Italian dishes!  My mouth is watering just thinking about that juicy chicken breast covered in all that cheesy goodness...yummy! It looks like a complicated dish, but it's actually pretty easy to make.  This meal is an absolute hit at my house and I'm sure it will be the same in yours.  

I serve my chicken parmesan with a green salad, spaghetti with pasta sauce, and cheesy garlic bread. Do yourself a favor and give this recipe a try.  I promise you won't regret it!
