Breakfast Tacos

Who doesn't love a good breakfast taco?! These are perfect for those busy weekday mornings. It takes no time at all to make and my kids love them. I often wrap these in foil and eat them on the go. This is a very basic recipe that can really be made with anything you like. You can add bacon, mushrooms, spinach, potatoes...you name it! Whatever floats your boat! Ingredients:
1 lb maple sausage (or whatever you like)
4 eggs (more if you like a lot of eggs)
1 (12 ct.) bag Mission street tacos tortillas
1 cup shredded cheese
(optional: salsa)
Instructions:
1. Brown sausage in a large skillet on medium high heat.
2. Beat eggs and pour it right in with the sausage.
3. Cook until eggs began to set, scramble the eggs with the sausage.
4. Remove from heat and set to the side.
5. Grab your tortillas. Spoon about 1/4 cup of the egg mixture into a tortilla.
6. Top with desired amount of cheese and salsa.
7. Serve and enjoy!
